Apple pie is one of my favourite bakes during the winter season. However, just a simple, perfect dish can turn out to be a disaster; apples that don't have that tender consistency or just turn out mushy.
We don't get much choice of apples where I live and there is no such thing as a Bramley (cooking) apple. I often have hit and miss experience with apples. The best choice I find, is using a mixture of firm apples such as Golden delicious, Granny smith, Ariane plus a few that tend to go mushy when you cook them.
