200 g plump dates

vanilla paste or extract (optional)
Soak the dates in enough warm water to cover for 30 - 45 mins.
Drain and remove the pits.
Put into a FP and blitz until smooth.Add the vanilla paste.
Store in a clean covered glass jar in the fridge or freeze in little batches.
Tip : Ideal for replacing sugar in baking or for making smoothies and energy bars.
You can use the paste on hot vegan buttered toast and crumpets.
You can also soak the dates in warm Early Grey tea instead of water.
