This salad is great on its own or added as a protein source to a salad. It can be made ahead for the week for those that meal prep.

Ingredients
  • 4 Steamed Beets
  • 1 1/2 Cup Cooked Quinoa
  • 1/4 Cup Red Onion Raw
  • 2 Small Sweet Potatoes
  • 1/2 Cup Lemon Juice
  • 1 Tbs Tahini
  • 1 Tsp Cumin
  • 1 Tsp Coriander
  • 1 Tsp Chile Powder
  • 1 Tsp Ginger
  • 1 Tsp Garlic Powder
  • 1 Whole Carrot Grated
Directions
  1. Cube Sweet Potatoes and roast in the oven at 350 F for 20 min.
  2. Chop Beets into a similar texture to rice
  3. In a large bowl combine all the ingredients and fold together
  4. Enjoy on its own or with some leafy greens or massaged kale!
