Healthy Bread

Ezekiel is by far the best.
but I think second place might be Dave's Killer Bread.
I have a Trader Joe's near me and I like their whole wheat bread a lot. It's one of the least expensive good breads out there .
You can select bread right in the bread aisle by looking at the label.
Look for whole grains. Anything in the 20s is good
Protein and fiber should be at least 3. and fat should be less than 3.
Sodium should be less than 300.
Sugar should be less than 5
Reduce those numbers by 25% for thin sliced bread.
And the smaller the list of ingredients the better.

The tastiest and healthiest bread should only be made with organic whole grain flours plus seeds/grains. No fat
and no sugar/low in salt.

I'm on day 3 of sourdough starter using just flour and water. I was surprised how many recipes called for adding yeast to the initial starter, as I thought that was the whole point of sourdough? Wild yeast?

I made a very good bread with cooked oatmeal and whole wheat flour
 
@Lou The stores in my area have Dave's, Arnold's, and I think Ezekiel's on the "good" list. I think they have all of the "bad" ones except Orowheat.

I only used to bake my own bread in the colder months, but I haven't done that in quite some time... and I miss it. I used a very simple recipe: whole wheat flour, rolled rye or oats, water, and a bit of sugar mixed in the warm water in which I was "starting" the yeast. I usually started with a "sponge", containing all the liquids and rolled grains, but only some of the flour. I added the rest of the flour right before I started kneading. I greased the pans with oil or margarine. I generally baked 4 loaves at a time (I have a big, stainless steel bowl for the dough) and froze 2 of them so they wouldn't go moldy.

What's funny is Orowheat, Brownberry, and Arnolds are all the same, just different regions.
The first list shows both Arnold & Orowheat as poor, the second shows Arnold as good! Same 100% whole wheat 🙄
Daves is good, but too expensive.
Aldi gets some good breads, even sprouted--but only as specials :(

We don't have Arnolds, but I had Orowheat on on My Good List. I wonder if there is something different about it to put it on the Bad List.
Around here Ezekial's is even more expensive than Dave's
