The balsamic vinegar really is a lovely addition to tomato based pasta sauces.
Ingredients:
1 small or medium onion, chopped
1 - 2 cups mushrooms
4 cloves minced garlic (or a teaspoon garlic powder)
28oz. canned crushed tomatoes
15oz. can diced tomatoes
1/4 cup sugar
1/4 cup cooking sherry
2 Tablespoons balsamic vinegar
2 Tablespoons dried parsley
2 teaspoons dried basil
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon sea salt
1/4 teaspoon crushed red pepper flakes
Instructions:
To start, saute the onions, mushrooms and garlic if using minced in a little bit of olive oil. Then you just basically stir all the other ingredients into the pot and simmer on low heat 10 - 15 minutes, stirring occasionally.
