What did you Cook or Bake Today?

Almond milk needed to be used. I wanted caramel, but I loused up the recipe- was supposed to mix the sugar with a couple Tbs water, but I mixed with 1/2 cup of milk---so it never caramelized :ignore: . So....I added a couple good splashes of spiced rum before adding the rest of the milk and it's soooo good! Can't wait till it cools :clp:
 
I made Plant-based Bistro's Mongolian soy curls for dinner. It was so delicious! I've also got dough rising for white bread. I think next time I will try the overnight-rise artisan bread, or maybe French bread or rye bread. I need to expand my bread baking. :D
 
I finally used the puff pastry I've had since the holidays. Sauteed mushrooms, onions, and spinach, then mixed in v mayo with a touch of dijon, loads of nooch and the last of Aldi cheddar shreds. I was just there and didn't see them anymore. I liked those more than their vegan mozz which is just sticky
Oh man, that's some restaurant quality food!
 
Black beans in the IP which is a pain. How I miss the already cooked ones from Aldi UK.

I'm planning to make a mole chili this week end and take some to my friend who is recovering from surgery. She really like the mole style chilli and has never even heard of it. The French are far from adventurous when it comes to eating foreign food.
 
I'm going to make a dessert to bring to a dinner date with friends. We are doing Indian takeout, so I'm not sure what I want to make. Something new, perhaps.

I was just looking up desserts that go with Indian food, and I think a fruit-based one would be really good as well.
Mmmm.. makes me think mango!
Anyone remember, wayyyyyyy back, I think around 2010-2012, Trader Joes had a frozen dessert Mango Sticky Rice. It was a half mango with sweet sticky rice on top and you microwaved for a short time, making the rice kinda hot, and mango still a bit frozen. It came with a sweet crunchy topping--as far as I remember. I remember it because it was one of the first things I got from TJ's.
I've tried to replicate, but that was my favorite thing there!

Trying to decide on what kind of seitan to make.

So I ended up making no-bake Swedish chocolate balls for the dinner on Saturday. These were so delicious!! I didn't roll them in coconut as the recipe stated because neither I nor the friends I visited like coconut, so I rolled them in the colored sugar I use for sugar cookies. All the desserts I had considered had nuts in them, and while I love nuts, one of my friends doesn't, so I went with the chocolate balls. They were a big hit! I'll be making them again.

Today I have made black bean burgers and some tofu bowls. I made Cheap Lazy Vegan's gochujang tofu (so freakin' good) and added edamame, broccoli and jasmine rice to the bowls. I have four meals, though when I looked at them, I think I will need a little salad with them. :)
 
I made this, but added some diced veggies and used what I had for spices and liquids.
Oooh!! This sounds delicious!!

Oh good, because I hated it :rofl:
Of course taste is subjective, it was a fine recipe---but the sounds of the cooking would have driven me mad if I didn't turn off the sound! The music was fine, but the clinking and scraping.... :yuck::lala:
