I had some stale bread, I had about a cup and a half of pumpkin soup left from last night. I created this
3 slices stale bread, 1 and a half cups of pumpkin soup, 1 vegan egg, ( I used a teaspoon of brown flaxseed )
sweet mustard pickles, pepper to taste
Preheat oven to 160 Celsius, mix flaxseed into soup, grease a small oven proof dish, spread bread with pickles, remove crusts and cut into triangles, layer the bread in the dish, pour over soup, let stand for about 5 minutes, sprinkle with fresh cracked black pepper. Cook for about 45 minutes in center of oven
It worked well, it made enough to feed M.I.L and me for dinner. Though mum only eats like a 2 year old.
It worked well enough that I will play around with tossing through some other things . A sprinkle of vegan cheese melted on top would be nice too.
Any ideas for what it should be called, and suggestions for other things that might be nice in this will be appreciated too.
