Thyme is what I think of when I think little bush and eastern, but rosemary, tarragon, mint, basil or oregano are also strong possibilities for herbs from bushes used to infuse oils. - Actually any herb can be used, these are just those you most often find.

It looks like a sumac plant as it looks like a miniature palm tree. The red berries have a distinct lemon flavour and are used to season meat or salads. It is also used to make za'atar which is a Egyptian spice mix or condiment and is sprinkled over fatuoush.

Don't forget that that their exists a sumac variety which has white berries which are poisonous.
