Papadzules -- (Spanish pronunciation: [papaˈtsules]; Mexican Spanish, from Mayan[papatsʼuːles]) is a traditional dish from the Yucatán Peninsula resembling enchiladas. In its simplest form it consists of corn tortillas dipped in a sauce of pepita (pumpkin seeds) filled with hard-boiled eggs, and garnished with a cooked tomato-pepper sauce.
I once got a fresh-made Ensalada de nopales (cactus salad) from the deli case of a Mexican market. It was spicy, so it took me awhile to get through it, but it was so good that I ate it all. I've been craving it again ever since, but the market is over an hour away from home. I was there because it was on my way home from where I was working at the time.
