I'm all about convenience! Don't like to cook? Too busy to fuss? But still want to be vegan/healthy? Try some canned, frozen, or packaged food, with good ingredients, and add to it some easy to make salsa, or dip, or nut butter. Your Cusinart can be your best friend! And help you be healthy, without going crazy!! And make your salads about other than lettuce! I seldom use lettuces--instead, concentrating on grape tomatoes, blueberries, avocado, mushrooms, radishes, etc. Chop so you can eat with a SPOON, to be really lazy! Add balsamic glaze, toss, and dig in! Yum! And Easy Peasy!! : )

I agree with you that it can be cheap and easy and that's why I love my cans of beans and my noodles - a can of beans, some tasty stock, and a variety of frozen vegetables and you have a great meal - I use my noodley soups and my oatmeal as a vehicle to include as many healthy and tasty items that I can and I enjoy it and am completely satiated.

I agree with you that it can be cheap and easy and that's why I love my cans of beans and my noodles - a can of beans, some tasty stock, and a variety of frozen vegetables and you have a great meal - I use my noodley soups and my oatmeal as a vehicle to include as many healthy and tasty items that I can and I enjoy it and am completely satiated.

I do what I can only call Jumble Cooking. I start with a can of black beans, then a can of beets, say, and some frozen asparagus. I add peanuts, walnuts, pine nuts, raisins, dried cranberries, crumbled Wasa bread. Then tons of spices, herbs, seeds--mushroom powder, fennel spice, cumin seeds, thyme, etc., etc. No plan, just a JUMBLE! My casseroles come out great every time! Chopped up, so they're SPOON food! Oven baked, or just room temp--let them marinate in a covered bowl for 1 hour, and eat! Convenient Vegan! : )
 
Jumble... I love the term as I have been using melange, or "kitchen sink", or lol "dog's breakfast" - jumble definitely describes how I eat my oatmeal and noodley soups...
