This takes a bit more time than your average avocado toast but I promise it is totally worth it!
Ingredients:
- Bread (preferably sourdough)
- Avocado
- Lemon Juice
- Garlic Powder or granules
- Salt
- Olive Oil (if you have the nice kind that's very flavorful you might want to omit this - I put the cheap stuff in for texture)
- Red Onion
- Cherry tomatoes
- Vegan Feta Cheese (make sure your vegan feta pretty salty because that's its main purpose)
*** No measurements included because the size of avocados vary so much - it's a season to taste situation. As a general guide line I typically use about 1 tsp of each seasoning ingredient.
Instructions:
Mash your avocado with olive oil, lemon juice, garlic powder, and salt. Toast your bread. Mean while, dice a bit of an onion, 1/2-2 Tbsp depending on how big your piece(s) of toast are, and quarter 2-4 cherry tomatoes. Spread your avocado on the toast, and top with vegan feta, then onion, and lastly tomatoes. Finally, and this is important, sprinkle a bit of salt on the top over the tomatoes.
