Post bacterial food poisoning gut issues

Hi guys, my names Hugo, I'm a new member.

I've been vegan for almost 4 years and vegetarian before that for another 4. I am an active guy, training ~ 10 hours a week in the gym and on the bike and literally used to SMASH the vegan food. Anything that was vegan, I would down, then down again, and never had any issues with digestion.

In June 2017, I was at a crappy function centre for work where I was the only vegan/vego. I was given some old rice and as a consequence spent the next 36 hours in hospital throwing my absolute guts out along with horrible expulsions from the other end. In hospital, I was diagnosed with bacterial food poisoning.

Since then, my body and digestion have been a total mess. I have trouble sleeping, I am constantly bloated, my "movements" are inconsistent, I've developed rashes and eczema on my hands and have developed general anxiety around food. I saw a specialist and dietician who recommended a low FODMAP diet, which I tried with some mild success, however, upon reintroducing food groups I found no clear "intolerance" and I really struggled with the low fibre nature of the FODMAP diet. Additionally, I found it very hard to even get enough calories from low FODMAP portions.

I'm frustrated, stuck and don't know where to turn! I'd love any advice or to hear from anyone who has had a similar experience. I am in the last 3 months of PhD at the moment so am totally stressed out and my gut issues are not helping!

I am so sorry to hear of the stress and physical suffering you are enduring.

I have no expertise in this area other than watching others and my suggestion would be to research Andrew Taylor "SpudFit" who had many serious physical issues and depression and ate nothing but potatoes for a year (under medical supervision). He thrived and was able to cure most/all of his issues. Maybe 3 months worth of potatoes sweet/white/purple etc would help?
