I was looking at a recipe that I had saved for North African Chickpea and Lentil soup. It had 3 cans (6 cups) beans, 5 cups vegetables, broth, and about 10 spices.

The beginning paragraph said that the soup could be topped with a hard boiled egg "to add protein to the meal". ?????

This concept you can't get protein anywhere but meat is really weird.

    • 1/4 teaspoon red pepper flakes¼ teaspoon red pepper flakes
    • ½ cup minced fresh parsley½ cup minced fresh parsley
    • 3 cups veg broth3 cups veg broth
    • 4 cups water4 cups water
    • 1:(15 ounce) can chickpeas,
    • 1 cup brown lentils, picked over and rinsed
    • 1:(28-ounce) can crushed tomatoes
    • ½ cup orzo½ cup orzo
    • 1 bag spinach1 bag spinach
    • 2 tablespoons lemon juice
    No idea why it copied things twice!

The recipe makes a lot of soup. 12 cups of broth is for a large family, a dinner party, or somebody with a large freezer. I cut the recipe in half, and still got a lot of soup. It was really good, and is on my make again list. I didn't have any zucchini, so I threw frozen spinach in at the end.

This was the first time using Ras el Hanout. I bought some a while ago, and never got around to using it. That stuff is really good.

I keep reading about that lately. I should buy some.

That soup looks nice and filling, more like a thick stew.
