Vegan Pumpkin cheesecake

I made this a couple of weeks ago, and it came out really good. I use the target brand gingersnap cookies in the crust.

So glad I lost a few extra pounds more then intended...gives me some wiggle room so I can try out all of these great pumpkin cheese cake recipes, ha ha ha. :)

Lucky you. I'll have to settle for pumpkin tea bread. I'm about to make one for afternoon tea.:p
 
I have a new recipe to try but it needs to be altered to make it vegan. My only concern is replacing four eggs. I normally do fine with one or even two, but four is going to be a challenge. But I'm going for it. I do have The Vegg for baking.
