today is leftover from Saturday day... steel cut oat/split red lentils and I will add the usual berries, and other goodies like ground flax, hemp, peanut butter powder etc
noodley soup again today and flavoured with spicy kimchi instead of my usual gochujang/miso - hmmm maybe some miso with the kimchi - I have to remember cabbage today as I keep forgetting it in the freezer - lots of kale and spinach again and all the other veggies and soy curls and mushrooms
For breakfast(?!), I had some of the kidney beans and fresh garlic I cooked in my slow cooker, with some white rice to soak up the excess cooking liquid added when the beans were done. I also had some raw hulled sunflower kernels. A bit later I had some rolled oats and half an apple. At some point I had a navel orange (with water to drink right afterward to keep the acid from damaging my teeth). @Emma JC 's meal, which she describes just above, sounds tastier... but I do love beans, garlic, and citrus fruits...
I had toast with vegan butter and Marmite and a handful of pumpkin seeds. I bought some electrolyte drops yesterday and I had some in a glass of water.
I have run out of frozen fruit so I will have to make a smoothie from what is left in my fruit bowl. My husband is going to Aldi later so he can buy me some more fruit.
Fennel salad with vinaigrette/yeast flakes.
Leftover Spanish kidney bean & vegetable stew with whole wheat couscous plus a drizzle of evo/smoked Cornish sea salt.
Apple puree with coconut milk yogurt/sweetener.
Friday, yay, noodley soup day again - out of fresh kale so it will be frozen today, some fresh spinach, mushrooms and lots of other frozen veggies - I do love the mix of the green & yellow long beans with baby carrots, and the Thai style too.
