Buttermilk

A nondairy milk with lemon juice added to it. I would use soymilk, as it's the thickest of the nondairy milks.
 
What about cider vinegar instead of lemon juice? Would it render the same result? Some of my recipes call for it but I don't really know what it does.

You would obtain the same result. Cider vinegar has a mild taste and you can't tell the difference as you would only need a few drops. It is the only vinegar I ever use for making vinagrette sauces.

Recipes I have used always use soya milk +1 tsp cider vinegar in placement of buttermilk. I've never actually used buttermilk pre-veganism so I have no idea if it tastes the same, but the results have been good in their own right :)

I made some buttermilk using soya milk plus 2 tsps of cider vinegar and it came out perfect. I needed it to make a soda bread loaf.

I do the same when I make a soda bread. It comes out great. It even curdles like buttermilk.
