Can Anyone Help?

My last few onions have this green part in the middle. Dies it mean they're old? Is it safe to eat or should I cut around the green part?

Looks like new shoots, which don't bother me, I use them. What does is what looks like rotten brown layer. Often the cheap bags I sometimes get will have a mushy brown layer, but just one layer is bad and the rest seems perfectly fine. If not too bad I'll cut it out and rinse the rest
I got a good bag from Costco, think a 5lb for like $5
 
I'd bought a jar of sun dried tomatoes in oil particularly for sausages. I'd only had dried tomatoes, and didnt' like them, so I was very surprised how flavorful they are! Turned out to be just what I was missing in Italian seitan sausage flavor! Just hope the texture is as good!

Ok good to know. I just didn't want to be afraid of it if some got in whatever I'm using it for. I feel like this bag was not the greatest for freshness because most of the onions were like this and some did have the soft layer too.

That's me though, I also cut mold off bread and cheese. My son is horrified

I've done that too. Not so much lately because of what I keep hearing about how bad it is to do it. But I can't say I would never do it again lol.
