I don't know what I fancy for dinner tonight... I did buy some One Planet pizzas so I might try the Tex Mex one and make a salad.

last night I parboiled and then air fryed about 5 potatoes and made a burger to go with them - lots of malt vinegar, ketchup and it was all very good with a piece of cherry phylo for dessert - I always think I am making too many potatoes and then once I start eating them I could have eaten a whole lot more

My jaw hurts so I just skilleted some onion, garlic, mushrooms, zucchini, yellow squash with stewed tomatoes and lots of spices.
So, I shifted gears and went for Shepherd's pie made with Beyond burgers.I'm in the same boat. I think I want Asian cuisine, though, so I might try a new recipe just for fun.
I'm going to make a big dinner today, a "steak" slice with potato croquettes with steamed vegetable and gravy.
last night I made Spanish Rice & Beans and it was very good - first time I cooked rice in tomato juice and I really liked it - we ate the whole pot...

it was a delicious warm couscous night - sauted mushroom, garlic, onion, zucchini and the added chopped cherry tomatoes and the chick peas with some Korean BBQ sauce and then the couscous - made a sauce from hummus, tahini, lemon juice, soy sauce, vinegar, maple syrup and mustard and drizzled it on top

it was chckn nuggets dinner last night for us also - Yves brand (Canadian!!!) - with souped up rice in the cooker and lots of steamed brussel sprouts - delicious...

I'm making a list of all the frozen stuff I can buy that isn't from the U.S. I will put Yves on my list. Supposedly they are available at Whole Foods, but I'm going to check to see if they are available in this local grocery I can shop from.
I felt very full up from lunch today as we ate quite late as the vegan cafe was so full we had to go out and walk around beforehand for a while to get a table. I had a vegan Mcmuffin with tofu, burger, cheese and a hash brown and then a raspberry and chocolate mini cake.
I just made myself a mashed avocado sandwich for dinner. I might have some crisps with my wine while we watch Dexter and The Pitt.

We had Valentine's Day tacos... Que Pasa tacos, Gusta ground with onion/jalapeno, pica (green onions/olives/cherry tomatoes), chopped greens on top, cheez shreds and salsa. For dessert the Baked Lemony Pancake Berry bars that I made.
Que Pasa and Gusta are both made in Canada although Gusta does not seem to be available in the USA and Que Pasa has been bought out by Nature's Path although the tortilla chips and taco shells are made in Canada.

Burritos with refried beans, rice, sweetcorn, tomatoes, lettuce, jalapeños and grated cheese. I don't have any salsa, but I do have hot sauce.
