Supper/Dinner Time! What's on the menu ?

I made TJ's troflie pasta with chickpeas, with mushrooms, onions, garlic cooked in some water and thickened with cornstarch. Seasoned with a Greek seasoning blend I got from Aldi. Added lemon at serving
 
just snacks last night - raw zucchini sticks/bell pepper sticks/cherry tomatoes/jalapeno stuffed olives with hummus/hot sauce and I heated up a miso tofu burger each as well - oatmeal cookies for dessert

Whole wheat orecchiette bol made in a rich wine sauce plus some added spinach after being cooked in the IP. Served with
melted Applewood, a sprinkle of yeast flakes/Vermondo Italian style cheeze and a drizzle of evo.

Mashed banana with coconut milk yogurt with a few drops of vanilla/sweetener.
 
I had seasoned soya curls (AF) finished off with Teriyaki sauce served with brussels and peas plus
a drizzle of evo/a sprinkle of yeast flakes and some smoked Cornish sea salt.

I have fruit and coconut yogurt for later one.
 
I've got leftover Chinese food (tofu with mixed veggies), and I pulled some rice noodles out of the freezer, so I'll top the noodles with the tofu and veggies. I might air-fry a couple of veggie spring rolls as well.
 
I think I'm going to have a salad topped with either buffalo tofu nuggets or a Boca chik'n patty cut up. I'm making the nuggets now in preparation for the Super Bowl tomorrow (I also am pulling out some soy curls taco filling for tomorrow). I have to get everything done today and get to my mom's before the snow starts tonight. I'm going to visit my dad at the nursing home as well. Busy day and lots of driving, lol.
 
I looked briefly for that recipe from a few days ago with the mushrooms and the pasta and couldn't find it so found another online and made creamy mushroom spaghettini for dinner last night - basically just lots of garlic, onion, mushroom, chili peppers with a creamy sauce made from oat milk, lemon juice, mustard, flour and nutritional yeast - I also did one sausage and sliced it in also. It was good, not spectacular. For dessert a piece of the phylo pastry - a bit better the second day. :D

I will be having leftover soy curls tacos and apple crisp (made by my mom) for dessert. One of our friends popped over to watch the Super Bowl last night, and she tried the soy curls tacos and loved them! I was pleased, as I thought they were a tad bland for my liking, but she thought they were delicious. She made two tacos with them. :)

People are different. I eat lots of beans and enjoy them, but usually find them a bit bland. However, I can eat a raw jalapeno pepper straight without making a face.... so maybe, from now on, if I bring something to a potluck, I'd better tone it down with the seasonings.
