Portabello slices with liguid smoke and smoked paprika and a topping of pine nuts, brussel sprouts, boiled then oven roasted potatoes followed by apricot crumble and whipped oat cream.

I love apricot crumble with cream. Is that the Oatly whippable cream?
 
I bought some of the vegan steak from Aldi and we did a taste test comparison with the Juicy Marbles steak. We cooked two with Flora butter and two with olive oil.

The JM one was better by far, but they both tasted better with butter. I also had a salad with tomatoes and fresh basil. I then had the new ice cream bar from Aldi afterwards. :yum

made onion garlic dip with 2 silken tofus packages - scooped it up with celery, green onions, bell pepper, zucchini sticks and cherry tomatoes and... some potato chips, of course - I also made myself a couple of those yummy miso tofu burgers and dipped them in also

I soaked some Pinto beans last night, and cooked them in my slow cooker today. I kept it simple: a generous amount of ground cumin, 5 garlic cloves, and a little bit of ground sage (very old- almost tasteless, but at least old dried herbs can't actually make me sick). When the beans were almost done, I added a cup of white rice to soak up the excess liquid. Quite good, even without salt! But I think it would have been better with some black pepper (which I had, but forgot about)- or some diced fresh chilies. I had pumpernickel bread on the side; leftovers went in the fridge and freezer.

Gnocchi (Lidl) with spinach,smoked chipotle flakes,yeast flakes, melted Applewood (the best cheeze ever for melting) plus a huge
drizzle of evo.

A blend of soya/coconut milk yogurt with a few drops of vanilla and sweetner.

we had roasted sweet potato last night also - I halved 3 sweet potatoes and 2 white potatoes and just turned them upside down on parchment paper in the oven late afternoon - then I had a block of tempeh that I broke into approx 1 inch pieces and marinated for a couple of hours in soy sauce, rice vinegar, hot sauce, maple syrup, garlic/onion/ginger powder and then put it and a half cup of water in a frying pan and sauted that up - very different for us and yet delicious - we did put a bit of butter on each of the half potatoes and some nooch and garlic powder too

It's apparently the Lunar New Year, so Mrs and little miss Summer had Chinese take-away and I had some home-cooked tofu and noodles (because I generally find Chinese take-away to be low quality food).
I miss Philly, which had a small Chinatown with wonderful sit-down and takeout Chinese food. My state is pretty meh for dining out in general, and the Chinese takeout is mediocre at best -- really lacking in depth of flavor. My homemade is much better, lol. There used to be one place that had an extensive (and really good) vegan menu, but it closed during the pandemic.

I'm going to have tacos made with soy curls filling for dinner tonight and all the fixings: lettuce, tomatoes, onions, olives and vegan cheese (some homemade out of the freezer, so we'll see how the texture holds up).
