Supper/Dinner Time! What's on the menu ?

I'm going to make Cheap Lazy Vegan's gochujang buttered Korean noodles and probably add some seasoned soy curls to it.
So, I never made this last night because I got a phone call from a good friend, and let's just say that it was a long call, lol. By the time I got off the phone, it was after 8 p.m., and I wasn't in the mood for cooking. Instead, I had sort of a charcuterie board: homemade vegan cheese and crackers with jam, half a banana sliced up, hummus and celery, some pickles and olives and a few banana pepper rings.

So tonight I'll shoot for the gochujang noodles. :D
 
The other day I had a pan fried Accro burger with whole wheat couscous with raisins/peas/ginger and evo.
Soya yogurt with mango puree.

Last night; Vemondo ravioli with a chiffonade of savoy cabbage pan fried with diced mushrooms, plus a sprinkle
of yeast flakes, Vemondo Italian style cheeze and a drizzle of evo.

Chocolat mousse.

I made rice in the rice cooker with all the great extras like raisins, turmeric, garlic powder, paprika and fennel seeds and we had a package of Yves chkn tenders with sweet chili sauce and hot sauce. Very satisfying.

hmmm found the above not published from yesterday...

Last night I made a simple fusili pasta with some leftover spaghetti sauce and some frozen veggies as I wasn't very hungry as we had a midday snack of those miso tofu burgers with Korean BBQ sauce on them - no buns or other condiments, just the burgers. So good.

oven roasted brussel sprouts, mushrooms and some fry cut potato. while waiting I dipped tortilla chips in yesterdays chili
I will not be using Beyond Burger in chili anymore. Reminded me of how much I used to dislike chili :laughing:
 
made one of our favourites meals, bean dip with blue corn tortilla chips, only this time I used 2 cans of pinto beans - mashed them in my casserole dish and added chipotle sauce, salsa, cayenne powder, garlic powder (it goes in everything), cumin, paprika, chopped onion, bell pepper, jalapeno, chopped 1/2 zucchini,
olives
, and cherry tomatoes halved on top - into the oven (with the lid on) for a good hour until it is bubbling all over - a sprinkle of shredded cheez on top and some hot sauce - two cans of beans made it very filling however I put so many veggies in that the last felt like I was just eating vegetables with a few beans... this was hearty

I had a bowl of Lidl's chilli sin carne with added spinach and a sprinkle of Tajin. Toasted granary baguette with spread.
Coconut milk yogurt with mango puree.

I was quite surprised that tinned chilli could taste good. Nothing compares to homemade but very handy when you're on the go.
 
last night we had a Sol Cuisine burger with lots of roasted potatoes and sweet potatoes - found a 10lb bag of sweet potatoes for just $7 so they will feature often for a while

Sauteed Planted pea protein strips with shredded savoy cabbage, carrots, mushrooms in a teriyaki sauce plus
a sprinkle of smoked chipotle flakes served with whole grain couscous with raisins and a sprinkle of ginger.

An apple.
