Whatcha Eatin?

Macaroni salad made with mock tuna and vegan mayo. I can't remember the name of the brand of the faux tuna, but it's pretty good. It's perfect in the salad.
I used to love macaroni salad with tuna! I've never seen mock tuna anywhere.
 
I most recently had garbanzo beans and brown rice, cooked in my slow-cooker. The garbanzos were dry, not canned, so I had soaked/rinsed them yesterday and put them on to cook overnight. I let them cool until they were only warm this morning, took some out and put that portion in the freezer, added enough brown rice to the cooker to soak up the cooking liquid (I had measured it before cooking), and finished cooking the whole mess. It was plain, drizzled with a bit of canola oil- but good! Leftovers enough for about 2 days- yum!
 
Breakfast was a magnificent toasted onion bagel...half with Miyoko's butter and half with Tofutti cream cheese and green olives. It was like being in heaven. 😁

Continuing my carb overload, Lunch was angel hair pasta with marinara sauce and lots of vegan parmesan.

Dinner was fried eggplant slices, a few pistachios and some grapes.
