Whatcha Eatin?

For breakfast i just had steel cut oats hydrated in almond milk, mixed with nutritional yeast, black pepper, quorn crumbles, ceylon cinnamon, nutmeg, cumin, chimayo chili, smoked paprika, parsley, tomato puree, and basil. A+.

Im lucky to have walnut growers around here; just got a hefty bag of walnuts from the farmers market :)

Toast with vegan butter and some fresh pineapple.
Im on a toast spree. Seems like any time im hungry, nine times out of ten i want toast with nut butter. :d

Sourdough artisan style spelt toast (Waitrose) with spread and Applewood cheeze.
The second slice with Flora and Marmite
Altho sometimes i eat my toast with marmite, which ive finally bought and tried.
For some reason im struggling to find spelt bread around here.... maybe i will try a european style mart.
But i also want to try my hand at sourdough again... I have flour laying around that isnt being used, as well as some buckwheat i think. I wonder how hard it is to make buckwheat sourdough... 🤔
 
it is noodley soup day however I wish to have Udon noodles w/spicy peanut butter sauce tonight so I may skip the noodles in the noodley soup and just have the usual base of gochujang/miso and throw in lots of veggies, soy curls and some black beans

Have you ever made your own udon noodles...or other?
I watched an PBS cook show making them. She filled a plastic bag with the dough and kneaded with her feet
 
I finally gave in and made fried mushroom and onion fritters. No one around really sells the tempura or good batter fried veggies, so my resolve to only get fried foods out leaves me wanting!
 
Woah. Just discovered a great new dessert.
I'm doing a whole food vegan diet. Wanted a sweet snack.
Got myself some fruit and yogurt with mint.
But raw fruit in plain yogurt is much more tart than sweet. Hardly sweet at all, really.
So i microwaved it, because heating/cooking fruit makes them sweeter/less tart, but wasnt sure how itd affect the yogurt.
But boy did that fix it! The yogurt wasnt gross at all.
The overall taste was warm and sweet.
The feeling reminded me of warm pie, or bread pudding.
Would highly recommend if you have a sweet tooth like me or need the easy extra calories on a whole food diet. :)

I miss udon noodlessss D: But im obsessed with miso. Such a great base.
