So, I have done a few things today. Made my pesto, boiled the lentil and steamed the vegetables.. tomorrow I will be attempting the main dish... a fraught cooking time.
I usually try and make a nut roast.. I had a really nice recipe I would eat with Rose Elliot's gravy and pesto... or sometimes I would make a vegetable lasagna.
This year though I am having problems getting enough time and space for it all so am trying for a quick option... that is why I am attempting a stew... to serve with pesto...
plain I know but it is one pot and the fridge is overloaded already, because of the parallel omni cooking that is being prepared by my mother at the same time... so that is what I have decided to do.
I also like Rose Elliot's nut roast. I'm going to make one with a twist. I like to have a simple, plain but delicious meal. No fuss or frills.
Overhere, they are going overboard and are buying foie gras, oysters, seafood, sickly cakes, wine, champagne. The aisles are jam-packed with customers.

Yes I understand what you mean by jam packed supermarkets, I was there today and it was annoying.. was glad to get out. I saw a woman running out of the store as if she couldnt wait to get out of there, and I thought "I know exactly how you feel."
I'm feeling so unmotivated! I have bought the basic ingredients for a Christmas dinner of sorts as I don't know if I can be bothered to do a lot of cooking now.
We are getting out early from work (yahooooo!), so I will be doing lots of cooking when I get home. It's going to be fun! I will be making apple pie tonight along with gingerbread (I decided not to make that one last night) and garlic smash potatoes, squash-apple casserole and possibly cranberry-orange muffins, as I now have orange juice for the recipe. I might make fudge, too. I decided I needed something chocolatey. My sausages are done and I saved some of my seitan from this week to take with me over the weekend. I will be making gravy (from a package, lol), as well. Oh, and I got turnips, so I might make those as well, or maybe I will save them for New Year's.
OK, the stupid cupcakes are done. Now to figure out how the hell I'm gonna transport these suckers.... LMAO

Decided to sprinkle the tops with organic raw cacao powder... also mixed some into the batter.
I think I'm gonna haul some to Jerry's in my largest covered pot. I don't want any catastrophes en route. LOL
I have not tried that. It sounds interesting, though.I like apple pie during the winter months. Have you ever tried making it and adding mincemeat to the apples ?
I haven't made anything (except for the Christmas pudding) and am hoping that I will have more stamina tomorrow.
