Christmas Food & Baking - 2016

Well, the stew is done amidst drama, and it is now resting in the fridge for tomorrow. It has a strong savory/mushroomy/thyme-y flavour.

The flavours will possibly mature overnight though. I had both new garlic and new onions for it. Not a bad time to cook a stew for this reason.
 
I like apple pie during the winter months. Have you ever tried making it and adding mincemeat to the apples ?

I haven't made anything (except for the Christmas pudding) and am hoping that I will have more stamina tomorrow.
I'd love that! I want to look for meatless mince now! I had a tiny carton of mincemeat for years and years! I liked mincemeat pie when I was little and was shocked when I bought that that it actually had meat! I have no idea if what I had as a child did. I only remember spiced apples, raisins, and ... I don't know what

Oh, man, KLS, I'm sorry you are feeling awful. Rest is good, though! I am hoping you rebound enough to enjoy the holiday, as I know how much you love it. *Sending you all kinds of healing, positive vibes*

Bed is the best place to be, and you have 2 days to recover at least. :hug:

No need to buy it' easy to make. I have posted a recipe in the given section.

I've been up since 6.15 and will have to put my skates on as I have tons of housework and cooking to do. I can't do it any earlier because I'd wake my neighbour up. She isn't an early bird like me.:p

The nut roast is happily roasting in the air dryer. I'm making the cranberry compote and will prepare the vegetables later on. I'm also trying to watch Docteur Zhivago whilst I'm cooking and cleaning. :p

I may pop out to Lidl's later on and pick up a butternut squash to make some soup for tomorrow.

My back is starting to hurt. I suppose it is due to all the stress that I have had to deal with these last few months.

On a brighter note, my little girl Shyva is happily following me around and licking up all the bits of food that drop onto the kitchen floor.

Off to make the gravy whilst listening to the Song Of Lara or Lara's song ? .:p

I've made the gravy and brandy butter. I've also blanched the parsnips and potatoes so they'll be ready to roast. I'm also making some steamed sweet potatoes and quinoa for Shyva. Everything thing smells wonderful.

I have a Californian bottle of Chardonnay that is nicely chilling away in the fridge.

We are having our "private" Christmas today. I wanted a field roast but we went to the horribly packed grocery store too late and they were gone. :( So we have settled for the Gardein turky cutlets. We will make mashed potatoes and have gone the easy way with canned sweet potatoes. I made the homemade cranberry sauce which we will share with family tomorrow. Fr0zen broccoli will be our vegetable. I cooked an apple crumb Mrs. Smith's pie for dessert. And we have the Publix brown and serve rolls. Of course we have a special Christmas beer as well!

I am not sure exactly what is being served tomorrow at the family get together. I think probably about the same things as we are having today except for the main course which will be for the omins. We always do just fine with sides at these affairs though! :D We will take some of our "fancy" beer to share.

Sometimes the easy way is the best and it's all good food! If I do anything at all it will definitely be "easy".
 
What's wrong KL ? Are you poorly ?
That's putting it mildly (whine, whine) but I think I turned a corner and feeling a bit better. Some kind of virus, going on day 8. My eye is pretty bothersome but I'm hoping the drops start to work soon...it's been 24 hours and the doctor assured me it would feel better.
