The only issue I see with zucchini that big is the seeds. I usually discard the inside and just use the “flesh”.

I made the zucchini cakes Ptree posted. I scraped out the seeds, but a few got in--and they were really really good! I will be making again, as my zucchini is really bigger than it looks in my picture, and keeping them in. They were a real hit!
