Supper/Dinner Time! What's on the menu ?

I have the hardest time with garbanzos, and I use the Instant Pot! Much, much, longer than other beans. They're the only bean I buy canned and then only use in soup.
I really dislike al dente beans
Update to my post from May 7th: the beans were cooked adequately after I cooked them further with the brown rice and spinach.

I had a baked potato with broccoli and vegan Parm. I was so busy today that I barely had time to eat. My sister is here, and tomorrow we are going to New Jersey for my uncle's 90th birthday party on Saturday. It will be nice to see my cousins, too.
 
I made frozen perogies last night - so good - first I did up a half package of smoky tempeh and put it aside - then large pieces of onion, mushrooms and fresh jalapeno (I was too lazy to do garlic so used lots of garlic powder) and put them aside - boiled the perogies and then fried them in some budder and then broke the tempeh up into pieces and added them and the veggies back in with the perogies to heat it all back up - delish.

I also use an electric cooker (similar to an Instant Pot) to cook my chickpeas. After soaking them overnight (about eight hours or so), I leave them cooking in the electric cooker for about 4 hours, and then I might add one hour or so, if I feel they should soften a little more. Pressure cookers can also work very well and much faster of course. For expedience and if I am in a hurry, I sometimes opt for the canned variety though.

However, with a little bit of planning, and not much hard work (as the electric cooker/pressure cooker does all the heavy lifting : - ), I tend to prefer home-cooked chickpeas to canned ones (which tend to be a little too heavy on salt, preservatives, etc.).

Yesterday I had a hearty salad for lunch (including baby potatoes, cooked carrots and beetroots, lentils and millet - besides the leafy greens, tomatoes, cucumber and spring onions) - with my 'easy' dressing (balsamic vinegar, dijon mustard, tahini and nutritional yeast). Then I had my 'mashed banana dessert' - with nuts, dates and dried fruits - sprinkled with of cinnamon, almond butter and tahini.

Given the 'hearty' lunch, I should have skipped dinner - but instead I fell for an 'evening snack' with roasted chickpeas, nuts and dried fruits mixed with condiments (a savoury snack with a little sweetness blended in).

All good.
 
Yesterday for dinner I had some beans mixed with lemon and some condiments - plus a couple of servings of my 'roasted chickpeas' snack (with dried fruits, nuts and condiments mixed in). All good.
 
last night we had a true aglio y olio - spaghettini with just olive oil, garlic and chili pepper flakes - sprinkled with nutritional yeast, of course and shared about a fifth of a whole grain baguette - it is very cost effective... I buy one of those very long baguettes and immediately freeze it and then just have as much or a little as we wish to have and I can make it last 4 or 5 meals

Yesterday I had dinner with a friend at a restaurant: I ordered lentil soup, vegan 'soy meat' balls, and a salad. I had dessert at home: I mashed a banana, mixed in some old fashioned rolled oats, dried fruits, nuts, cinnamon and a sprinkle of tahini. All good!
 
The day before yesterday I made an accidental 'buckwheat soup' (overcooked it in the rice-cooker + added extra vegetable broth). It turned out to be very nice and filling (photo below) - plus: I had a hearty salad (photo below too). Orange and nuts/dried fruits for dessert

Yesterday I went out for dinner with colleagues - I had pasta with vegetable sauce, and ginger tea. At home, for dessert, I mixed old-fashioned rolled oats with fresh blueberries, dried fruits, dates and a sprinkle of tahini. All nice
