Supper/Dinner Time! What's on the menu ?

Butler Soy Curls - they are vital to our life.... lol ..... seriously, with the tariffs coming I am going to buy a few more bags tomorrow (we already have about 10) as it is the one USA made product I am allowing myself to buy. I rehyrdate them in my soups or if I am using them to air fry or in a chkn stir fry or as an orangy beef then I soak them in a bowl or ziploc bag with water and spices like poultry seasoning for chkn and some garlic powder and cayenne or maybe Better than Boullion roasted garlic or veggie - then I just pour off or squeeze out any excess moisture and air fry or stir fry.

Last night for dinner we had perogies with a side of tofu burger and 1/2 package of bacon tempeh (I didn't use it for brunch yesterday). They were sauerkraut perogies and I had a partial jar left of sauerkraute so had that on the side also.

I'm also allowing myself to buy the Butler soy curls. I love them so much, and they are such a staple for me. I eat them weekly in some form. And I am at least buying them from a locally based online vegan store, as I'm doing my best to avoid Amazon (where I initially bought them, as they aren't sold in any grocery stores near me).

I'm going to make a soy curls dish for tonight's dinner. I just haven't decided which one yet. :)

I had wanted to make some vegan rice paper dumplings (a recipe from Dr. Vegan) with seasoned soy curls, but I discovered I was out of rice paper. So I'm doing a stir-fry instead with the soy curls, leftover cabbage from yesterday's Thai lettuce wraps, along with the leftover sauces. I'm adding carrots, onions and spinach as well. I will have that over rice with cucumber and tomato side salad topped with Italian dressing.

I was tempted to get a takeaway, but I decided to eat the Indian ready meal I have in the freezer. I'm going to make a salad with lemon juice and I don't have any naan bread so I might have a bit of garlic bread too.

I sauteed cooked brussel sprouts with onions. I covered the bottom of the pan with like 1/2 inch water, then added a small pat of spread. I forgot how good that works

Has anyone make Spaghetti Al-assassina? I watched a Merle vid of the stuff she keeps on hand and she mentioned that--looks like something I'd like- Chef John's Assassin's Spaghetti Is the Original "To Die For" Recipe

wow that looks like a recipe right up my alley... yum

we did make an epic fried rice last night... lots of garlic, onion, peas, corn, green beans, 2 Just Egg patties chopped, soy curls soaked in water with poulty seasoning, garlic, cayenne - used all jasmine rice (think I really prefer basmati) - it was so good as we put a bit of oelek on top and we ate the whole pot... geesh

@silva That spaghetti sounds like something I'd go for. I usually enjoy a bit of fire in my food if it would otherwise be kind of bland. Then again, I really like pasta with just a regular tomato sauce- I never seem to tire of it- and this recipe sounds like a bit more work than I'd care for. I also tend to avoid from anything charred.

I cooked two bunches of Tuscan kale, about 4-5 carrots, celery and a rinsed can of chickpeas with 4 cups water and Vegeta seasoning in Instant Pot for 4 min. I made the brown rice and millet ramen to go with it, with nooch.

Teriyaki, miso, airfried tofu, broccoli, cabbage (more a rice texture) ramen noodles, pepper, garlic and onion. Lots of spices.
I asked my husband to shred the cabbage in the food processor while I did the rest. He looked everywhere for the plastic piece you push food in and it was in the top, he had cabbage in it. Then I realized he had used the cut disk and the blade at the bottom, so more like cabbage rice. It is pretty good though.
