What did you Cook or Bake Today?

Again I had many problems with bread! The 'starter' that sat overnight didn't foam, so I mixed the 1/2 tsp for the dough part with water and found it was bad, so out went that starter. It was an opened pack that had sat for I don't remember how long
Ok, started over, put the Dutch oven in at 475 F, when it came to putting in the raised dough it didn't seem hot, but I wasn't thinking at the time. when it beeped to lower the temp I then realized my oven was still in preheating mode, and not even 200F! This happened the last time I made bread.
Anyway, the crust isn't great, but bread is 'okay'
 
so I decided to try making bread again and trying to do it in the simplest way possible... I started it watching a youtube video and then somehow switched to another video and so the final product was whole wheat flour, packet of yeast, 2 tsp sugar, 1 tsp sale, 1 1/2 cups warm water, 3 cups whole wheat flour - the usual yeast in warm water with the sugar, then the salt and then the flour - sit and then rise for 1 hour - using a spatula move it around a little and into a ball - another hour to rise - these recipes call for it to be cooked in a dutch oven but I don't have one at hand so I used a casserole dish with a lid that is 2.5 quart and it worked fine - I didn't knead it all, I just put some flour on parchment paper and put the dough on the paper and used the paper to just roll into a loaf shape - put some of the flour on top and did the knife cuts and put in the oven (lid on) for 40 minutes at 425 degrees and then another 5-10 with the lid off - it came out great, if a bit yeasty smelling/tasting however I really like it - soft inside and crusty outside

ps this is the one I ended up with and she used even less ingredients than I did - I have trouble getting my yeast to foam without sugar

I've had the best results with the no knead overnight bread. That always seems to come out really good. I just got hooked on sourdough by all if the TikTok and Facebook reels that have been flooding my feed. I remember having a sourdough starter 35-40 years ago. I would "feed" the starter once a week and keep it in the refrigerator. I never made bread but would make cinnamon rolls.

I do think sourdough is made harder than it has to be. I'm not even looking for the picture loaf. I just want the "crumb" to be soft and springy with some holes. I'm going to keep at it. I follow a group on Facebook and they are super helpful. Right now it's a fun hobby.
 
M made chocolate balls for us and she did something very unusual. She added some of my granola to the mix and it gave the balls a lovely crispy feel withing the softness. I loved them!

That chewy, kinda stretchy, full of holes bread is what I'd love to make! Was attempting with the last one that had ann overnight starter. I failed with the starter and had to start over, so got regular old wheat bread
Cinnamon rolls with sourdough? :confounded:

I mixed my very thick soy/cashew yogurt with date paste and vanilla extract. So yummy!

That's what my wheat bread looked like. What is "unfed starter"?
My grandmothers white bread was always full of holes and amazing. Never sourdough

Because I leave my starter on the counter I have to feed it every day. I shoot for the same time each day, late afternoon, give or take an hour. So I use the starter before I feed it when I want to bake bread.

There are recipes that call for using starter at its peak which is usually 4-6 hours after feeding an already established starter. Apparently the closer to peak, the more yeast cells. Your dough will proof faster. But since I wanted to do an overnight loaf I use the hungry starter so the dough rises slower.

It can be very complicated, yet there are people who don't follow the rules per se, who feel sourdough is very forgiving and they are very successful. I'm starting to get braver and experimenting more to find what works for me.

I have a pot of vegetable soup on the stove. My neighbor brought me some produce that had to be used so I have thrown this together. No recipe just some veggie broth, an onion, carrots, potatoes, green beans, a can of diced tomatoes, some frozen mushrooms and spinach. Various spices added for taste. I will have to freeze a good bit of it because it is a lot of soup!
 
Loaf number four of sourdough bread! I'm getting so much better. Or I got lucky, haha. This one has a nice springy crumb/texture. I'm so excited. I had to cut the bottom off because it was super crunchy. Tasted good with butter, though! 😁

I'm going to make something with soy curls today, maybe a stew. I also want to make some homemade Just Egg. I'm craving an omelet. And bannock bread or more drop biscuits.

I made the soy curls stew from Sweet Simple Vegan. It's delicious!! It was a little bit of work, but very worth it. I made a couple of hunks of bannock bread, too.
