Whatcha Eatin?

Small plates:

Leftover vegetable & white bean soup.
Finger sandwiches; ww bread, Flora, mashed avocado with tajin and a slice of Vegan Deli with Dijon mustard.
An orange.
Prepping the day's jumble casserole--lentils, snap peas, sweet potatoes, peanuts, pine nuts, nutritional yeast, organic cocoa powder (yum!), lion's mane mushroom powder, matcha powder, tempeh crumbles, fennel, oregano, sumac, barley flakes. Marinate covered for 1 hour, bake 30 minutes (all items are already cooked), at 350 degrees. A day's food! Happy New Year, all! : )

Small plates:

Leftover potato & cauliflower salad with Dijon vinaigrette/yeast flakes.
White cabbage slaw with sliced avocado and vinaigrette plus chopped walnuts.

An orange.
Not all salads have lettuce! I make one you can eat with a spoon. Grape tomatoes, cut in half; blueberries; mushrooms, chopped; green pepper, chopped; radishes, sliced; green beans, chopped; avocado, scooped with an espresso spoon in small bites, on top of salad. A drizzle of balsamic glaze, and spoon in! Last meal of the year. Happy New Year, all! : )

I am going to finish the year with my oatmeal melange as I haven't had it in a while. Rolled oats, soy curl crumbs, molasses, frozen berry mixture, ground flax, hemp hearts, peanut butter powder, cayenne, vit c powder, dk cocoa, turmeric/pepper, banana, walnuts, pumpkins seeds raw.
