Whatcha Eatin?

Small plates:

Mole chilli.
A tiny granary baguette sandwich with Flora, Dijon mustard and a slice of Vegan Deli.

Soya yogurt with cinnamon/sweetener and apple puree.

Saturday is normally steel cut oat day however I am still deciding between that and turning the leftover colcannon into pancakes.... hmmm, if I do the pancakes we will have some breakfast beans and some Field Roast Apple Sage sausage with it, and if not today then this is tomorrow for sure.

yesterday we did make the beans on toast and I tried to make waffles from the leftover colcannon... the moisture in the cabbage made this impossible so I just put in the frying pan with the Field Roast apple sage sausages and browned it up a bit - delicious

today will be steel cut oat/split red lentil day with berries, molasses, date, ground flax, hemp hearts, maple syrup, walnuts, pumpkins seeds and toast with peanut butter

Freshly baked Ww sourdough bread from the hypermarket with Flora/mashed avocado and lentil & oat loaf with mustard.

An orange plus a few almonds.

WOW! I know what colcannon is, and would never have thought of making it into waffles. VERY creative! I hope it didn't do any damage to your waffle iron.

My most recent meal was rolled oats, a few kidney beans, and an apple- along with some kabocha squash I grew this past season. I'm still thinking I should have let it ripen on the vine for a longer time; it wasn't nearly as sweet as I remember the original squash being when I cooked it.
