I just had a delicious salad made with baby spinach, carrots, red onion, cucumbers, tomatoes, avocado, seasoned soy curls and banana pepper rings topped with Italian dressing.
cold again today so miso gochujang noodley soup it is - I still have cabbage that is definitely going in, kale, spinach, froz green & yellow beans, thai style froz mix, soy curls.... yum yum
I made a big breakfast. Veg sausage, a potato waffle, baked beans and grilled tomatoes. I also had some grapes, a blueberry yoghurt and an iced green tea.
I just had some Ma Po Tofu (from a local street vendor) and 3 slices of multigrain bread which I'd brought along. I have a Clif bar in my pack I was going to eat as part of lunch- but the Ma Po won out. It was the soft variety of tofu cooked in a very spicy/hot sauce, with white rice on the side to soak the sauce up. It didn't appear to have any vegetables cooked with it, but I wouldn't have been able to taste them with the fiery sauce.
Yesterday evening, having gin pink cocktails with nibbles (organic tortilla chips, spicy rice crackers & green olives) by the river bank with
a pal and her niece's dog. At the same time my pal and gd children were enjoying the beautiful weather at the Pavillion gardens in Brighton feeding the pidges and then enjoying a vegan Mr Whippy on the seafront. So jealous!
I had a salad for dinner ( chicory, grated carrots, smoked tofu, fresh parsley/chives plus vinaigrette/yeast flakes and chia seeds.
Apple puree with soya yogurt/cream and sweetener.
going to make our usual breakfast beans and have them in a bowl with an everything bagel with Just Egg patty/cheez shreds/jalapenos and orange/banana slices for an appetizer
I am having a salad, green beans, and a falafel bowl from the company afia. They are frozen one dish meals that are really good. The one I am having today is Roasted Peppers and tomato with rice.
