tortillas chips and salsa - a mix of red salsa and green salsa topped with kalamata olives, green onions, chopped greens, a few cheez shreds - the last of the chocolate cake/icing/jam for dessert
My mom gave me some leftover filling from our stuffed squash dinner the other night, so I'm going to stuff a butternut squash with it and have that for dinner. I might sprinkle a bit of vegan Parm on top.
So many incredible meals listed here- I am definitely inspired We had wholemeal pasta salad with yellow peppers, green and black Spanish Olives, sundried tomato, sunflower seeds, and chopped spinach.
tried doing my air fried potatoes in rounds last night instead of my usual chunks, did both sweet potato and regular potatoes and they were good - two downsides, they take up more room and no height so had to do two batches and they became cold a lot quicker
had them with a caesar salad and Gardein fissh Fillets - very good
