Supper/Dinner Time! What's on the menu ?

I do love spicy food. I particularly love Thai and East Indian cuisine, but Mexican food is also something I really enjoy. Tonight I'm making Massaman Curry with Sweet Potatoes and Tofu. Since I can't find Massaman curry paste I'm just making my own. There are no shortage of recipes online. I'm anticipating a flavour explosion. I'll post the recipe below if anyone wants to try it.

Massaman Curry Paste:
  • ½ cup roasted peanuts
  • 1 tbsp. ground coriander
  • 1 tsp. cumin
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground cloves
  • ⅛ tsp. ground pepper
  • ⅛ tsp. ground nutmeg
  • ⅛ tsp. ground cardamom
  • 1 tsp. ground turmeric
  • 5-10 dried red chili peppers* rehydrated in water for about 10 minutes and seeded
  • 1 stalk of lemongrass, minced
  • 1 three inch piece of fresh ginger root, sliced
  • 4 garlic cloves
  • 1 shallot
  • 1 ½ tsp. lime zest/peel
  • ¼ cup soy sauce
  • ¼ cup maple syrup
  • juice of 2 limes
Just use a food processor and blend it all into a paste.

I'm making a veggie chili with soy curls and black beans. It's also made with pumpkin puree. I did a taste test, and while it's good, it could use more chili powder. I always put a ton in my chili, but that said, it has a very nice flavor. It also has cinnamon in it. Something different. The recipe is from Dani Spies of Clean and Delicious. I subbed out the turkey and used soy curls. The rest of the ingredients are vegan. :)
 
A peasant style one pot (IP) vegetable/mixed bean/potato/pasta stew (thick soup)
with a sprinkle of smoked paprika/yeast flakes plus a drizzle of evo.
Coconut milk yogurt with a few drops of Cornish salted caramel and some Speculoos biscuits.

I had a new to me vegan burger (well, two, actually) in buns with just mustard and ketchup as I wanted to see what they tasted like without any salad etc... Nice.
 
I'm in a burger mood for my company tonight. I'm going to make vegan Big Mac's using Impossible burger. I'm not making shoestring fries, but instead some potato wedges to go with it. My friend is a fairly new vegetarian and she will enjoy the novelty of having a Big Mac.

Now if I can only find some iceberg lettuce for a reasonable price.

we had a ton of potatoes and sweet potatoes, done in the air fryer, with Gardein Chckn Tenders and Swiss Chalet sauce on it all - so annoyed that the powdered version of the dipping sauce has chicken fat in it and the canned version doesn't - weird - now I will have to donate the 2 powdered packets that I bought
