Supper/Dinner Time! What's on the menu ?

Indian spiced pinto bean pot, with basmati rice and red lentils. Also included tomato cubes, olive oil, onion, carrots, garlic and mushrooms. Organic.


When I went to the grocery store to get some Indian spice mix I did not like the mixes they had, so I bought all separately curry powder, nutmeg, fennel, anise, cardamon, cinnamon, cloves and coriander.
 
I have some leftover rice from the NYE Chinese takeout food fest, so I made a burrito bowl with black beans, canned tomatoes, onions, fried cabbage, corn, guacamole, vegan cheese and hot sauce. I'm having a handful of tortilla chips with it.

I finally gave in and treated myself to the tray of olives and artichokes (and feta for my son) from Aldi. I had several over the cruciferous crunch salad mix from Trader Joes, using the marinade as dressing. Satsuma segments and some dried cranberries topped it off.

Sauerkraut in the IP with carrots/potatoes/stock/juniper berries/bay leaves/
ground coriander/a frankfurter served with Dijon mustard.

Apple puree with Alpro skyr yogurt/sweetener.

I'm making a Thai style stir-fry tonight.

Here's my sauce recipe if anyone wants to try it.


Sauce Ingredients:

1 cup natural peanut butter

1 can organic coconut milk (whole, full fat)

4 tablespoons fresh lime juice

3 tablespoons soy sauce

1 tablespoon fresh minced ginger root

3 cloves garlic, minced

The original recipe called for fish sauce which I replace with a few splashes of vegan Worcestershire and/or oyster sauce.

* hot sauce (sriracha) -1 tbsp for mild, 2 tbsp for medium, 3 tbsp for spicy, 4 tbsp for HOT, etc.

In a bowl, mix (whisk) the peanut butter, coconut milk, lime juice, soy sauce, Worcestershire, hot sauce, ginger, and garlic. Taste and add more sriracha according to heat level preferences. No cooking necessary. It will cook into the stir-fry.

I had an appetizers/snacks kind of dinner: artisan vegan cheese from Divine Treasures (it was herbed and quite tasty, though a tad soft for crackers, but I made it work) and crackers; tortilla chips and guacamole; Aldi chik'n tenders with a spicy mayo dipping sauce; and a lovely double IPA from Long Trail that's sort of like Tree House Brewery's Julius beer. Yum. The last of my mint chocolate chip cookies (2) from the Christmas baking.
 
our dinners, the last two nights, have been lazy to say the least - mainly due to large breaklunches - rice with Indian Tasty Bites on Thursday and last night was a shared bag of potato chips with hummus, popcorn and dark chocolate for dessert :confused:
