Supper/Dinner Time! What's on the menu ?

I made the moong dahl just egg copy recipe-again. So dang gummy! Like the play doh I used to make with cornstarch.
Last time I said I should try it with plain soy milk, just the beans and water, but i did it again with oatmilk :shrug: No idea if that's a problem or not. Tasty with the black salt on toast though

That is one of my favorite things at PF Chang's! So glad they came out well!

I've been having American chop suey made with soy curls taco filling all week. Delicious! I'll think I have about two servings left, so two more dinners tonight and tomorrow. :)

meant to have a smaller meal last night and then... Future Farm Burger open-faced hot hamburger sandwich with fried mushrooms, onions, mushroom gravy, boiled potatoes and steamed sweet peas (incredibly delicious) ...... an 1/4 cinnamon bun and 1/2 nanaimo bar for dessert

Peanut tofu Buddha bowl with brown rice, guacamole, kale and carrot ribbons.

(The peanut sauce is made with peanut butter, tamari, lime, sesame oil, ginger puree and garlic. It's delicious- will definitely make again.)
 
I have a few non-vegan friends coming for dinner tonight. They already know I'm serving them vegan food, but they don't know what. So for a crowd-pleaser I'm making a really nice veggie lasagna with homemade garlic cheese toast. I'm also making a kale coleslaw to serve on the side. The béchamel sauce layer and some tofu ricotta will give it an authentic look, taste, and mouth feel. And not to mention a small fortune in locally made vegan mozzarella to top it with.

Last night we had a small bread/slab pizza plain with just the sauce it comes with and garlic powder sprinkled on top, heated then cut into fingers. Bought some special crackers and had the Nuts Cheez Blue Cheez (just a portion of it) and a couple of slices of fake Swiss cheez cut into small pieces for the crackers (bought both cheezes at that cool vegan store) then added green olives stuffed with jalapenos, some spicy banana peppers and cherry tomatoes - it was all delicious and still have lots of both cheezes left. We did eat the rest of the nanaimo bar though so it is now all gone. :sniff:

I make lasagna with tofu ricotta and bechamel sauce. It’s always amazing. Can’t wait to hear how it went. Hope you have a great time!
 
I'm having a bunch of snacks/appetizers for Super Bowl Sunday. :) :
Vegan buffalo chik'n dip (using soy curls for the chik'n) with tortilla chips;
Veggie tray (cauliflower, carrots, cucumber and celery) with vegan tzatziki sauce;
Fruit salad (mixed berries, peaches apples, pineapple chunks and bananas);
Vegan spring rolls with a soy sauce dip;
Aldi vegan mozzarella sticks with a marinara sauce dip.

No beer because I have to work tonight. :( But it's all good.

And anything else I might have room for. :D I'm just going to have a little of each thing and see how it goes.
 
tried another new product (for us) from the vegan store: vegan shrimp (Veggie Paradise) from frozen, blackened and then fried in a pan and served on our usual aglio y olio spaghettini (garlic, onion, olives, cherry tomatoes) - they were good although the full package was twice as much as we needed so next time we will use half the package - also could have used a touch more crisp on them

No superbowl for me--I actually meant to go shopping and avoid crowds!
Have a pizza crust rising now for a white pizza with Trader Joes mushroom medley-that has a variety of mushrooms in a garlic seasoned olive oil. I got Violife mozz shreds on sale I'll put under the mushroom topping.
I think Violife mozz is my favorite

Yesterday I made a curry and today a hammy seitan. I'm set for the week!
