Supper/Dinner Time! What's on the menu ?

I finally got to try tofu-gluten, and black bean sauce as a Chinese restaurant. I was disappointed in 'seitan', it was very very soft. I loved the black bean sauce though, and tomorrow will make a trip to the big Asian store. Of course their greens beans were great! I'll get those 'long beans' there too.
That was yesterday, I finished it today. I also finished my french onion soup
 
when shopping yesterday the place that I buy the Future Farm burgers had a "discontinued" sign on them and they were on sale for $5 so I bought all that were there (6) and their ground meat was also being discontinued and so I bought one of those for $6 as I hadn't tried it yet - maybe will make a meat sauce for pasta tonight and go back and buy more if we love it

so... last night we had a hot hamburger sandwich with tons of sauted onion/mushroom, mushroom gravy, some boiled potatoes, baby peas - so so tasty

My enchiladas were good, but I forgot to add corn! I also forgot the TJ"s soy chorizo :shrug: They were just refried beans & salsa spread on tortillas, topped with Cashew cheese shreds and a mix of black beans rice and salsa. Green enchilada sauce poured over all with remaining shreds.
I missed the sweet ''pop' of corn kernals

last night we had whole grain penne with lots of veggies, garlic, onion, mushrooms, bell pepper, olives, greens, cherry tomatoes and sliced Field Roast Italian sausage - 2 Dad's oatmeal cookies for dessert

A red cabbage and spinach slaw with a sliced hot happyvore banger, Dijon vinaigrette, pumpkin seeds
and yeast flakes.
Leftover pan fried French beans with a sprinkle of lemon pepper/evo/yeast flakes.

Christmas pudding with soya cream.

I am marinating portobello mushroom, but I don't know what to make as a side.
Okay so pearl couscous salad with onions, garlic, spinach, blistered tomatoes, peppers, green olives and pickled okra with miso and lots spices.
I'd like that minus the pickled okra--but maybe I'd like that too :shrug:

I'm making a leek, corn, and potato soup. I can't remember when I last bought leeks. I tasted some and they taste just like green onions. I can buy green onions really cheap, put the root in a glass of water and have them for a looonnng time growing. Why the fuss over $3 a pound leeks 🤔
 
Last night, casarecce pasta stir fry, with tofu, almonds, spinach, orange bell pepper, onion, garlic, Italian spices and soy sauce.

Tonight, mung bean curry with red lentils, carrots, yellow bell pepper, Indian spices and onion.
