Supper/Dinner Time! What's on the menu ?

I marinated tempeh yesterday. I did not get around to making dinner because we went to have a couple drinks. I have it in the oven with brussel sprouts, onion garlic and spices.

Edit. I I marinated in some vegan beef broth powder, liquid smoke, little bit of apple cider vinegar and pickling spices and a lot of other different spices. Yum.

Whole wheat pizza margherita (Lidl's) with added Applewood cheeze, Greek black olives and oregano.
Chickpea salad with Dijon vinaigrette/yeast flakes.
An orange.

took last night leftover Buffalo sauce and added oat milk to it and then mixed it in with our regular pasta dish we made which also had crumbled Gardein Italian sausage in it - lots of garlic, onion, bell peppers, olives, cherry tomatoes

no space left for dessert

finally tried out "brisket" that we bought at the vegan store a few weeks ago - it was seitan based and we made tortillas to put the slices in along with onions/bell peppers/jalapeno, horse radish, white sauce (hemp heart/hummus based) - it was good, not amazing... and it was $14 and we had some leftover for a sandwich - I will not buy it again - I think we are just going to be thrilled with the alternatives that we really like (Field Roast sausages, Gardein and Future Farm burgers/breakfast sausages) and otherwise stick to mostly whole foods like beans etc.

also, making tortillas is a long tortuous event.... so I am not sure that we will be doing them again either, unless I try rolling them out instead of using a tortilla press

Tajin flavoured puffs.
Leftover falafel stew with added red roast peppers plus a sprinkle of smoked paprika.
Steamed French beans/evo/yeast flakes.
Soya yogurt with a few drops of Cornish sea salt caramel/sweetener.
A soya/orange biscuit.

I've made some delicious jackfruit seitain brisket! I imagine much easier than homemade tortillas! Interesting to note a tortilla press wasn't easier. I still recall seeing one at a thrift store, heavy too, and not knowing what it was until later and being disappointed I didn't get it!
