I'm going to attempt Sweet Simple Vegan's tofu bacon and have that in a BLT pita with vegan pesto and mayo along with lettuce and tomato. I'll probably have a side of potato chips, a pickle and a beer. Happy Friday, y'all!
Very simple but delicious pasta dish. Roasted chopped yellow pepper in olive oil, added cherry tomatoes, crushed garlic (lots of), a sprinkling of dried basil, oregano and chilli flakes and roasted a few more minutes until tomatoes softened. Cooked pasta and some tenderstem broccoli. Mixed all together with some grated vegan cheese and a grinding of black pepper.
hot hamburger sandwich with a side of air fried potatoes, carrots and parnips - topped with mushroom gravy, sauted onions & mushrooms - oh wow, those Future Farm burgers are so amazing and tasty and if I hadn't already learned not to eat two of them at once I would be sorely tempted
I'm making stuffed portobello mushrooms for dinner tonight. I have some Very Good Butcher's pepperoni. I'm kinda going with a mini pizza theme, but mushrooms as the base.
Yesterday evening I went to my pal's home for gin cocktails and nibbles. We both took her niece's dog for
a walk (7.5 km) through the shrubland up on a hill. Saw two wild rabbits hiding in the shrubs.
So, when I got home which was too late to make a meal, I
had a hot happpyvore banger sandwich (yeast corn bread) with spread and Dijon mustard followed by
some fresh fruit.
Soy curls thick stew on quinoa, cooked with red bell pepper onion, garlic and asparagus. Stew was tomato paste and the soy curls marinade of soy sauce, apple cider vinegar, maple syrup, liquid smoke, BBQ spice mix, garlic powder, dijon, molasses.
our usual aglio y olio with whole grain spaghettini, lots of garlic, onion, mushrooms, cherry tomatoes, olives and then I soaked some soy curls, covered them with some Korean BBQ sauce I found in the store and air fried them - very good except that I turned them into jerky more than chkn strips so my honey wasn't pleased with that.... hehe.... I ate them all!! then had carrot cake for dessert
We had Peas Of Heaven Chorizo sausages in WW hotdog buns with fried onions and a green salad on the side. I had curry ketchup on my hot dogs and M had grainy mustard on hers.
Started on Seitan meatballs, boiling, later to pan fry. I am going to make it with whole wheat spaghetti, zucchini, yellow squash, stewed tomatoes, onions and garlic.
Made an epic risotto of asparagus and tenderstem broccoli, topped with a couple of slow-fried big fat mushrooms. . Genuinely one of the most delicious things I have eaten
due to not changing my clocks on the stove and microwave we ate our brunch very late and so for dinner just had a bit of hummus with some breadsticks and some popcorn with Frank's hotsauce on it - and um some cake
it was Taco Monday last night - started to make it and had the onions/jalapenos/bell pepper sauting and went to put in the Gardein ground and there wasn't any ..... oops ..... so we took some soy curls and made them smaller (used crumbs etc) and it turned out great - had some cheez shreds, pico (green onions, cherry tomatoes, olives, cilantro), salsa and some romaine shredded on top - the last of the carrot cake for dessert
