Supper/Dinner Time! What's on the menu ?

Chicken soy curls, "healthy" instant noodles, carrots, collard greens, peppers, sauces and spices. It's pretty good. I had a needle craving. Eating super early due to skipping lunch.

Bought take away chickpea and potato curry with saffron rice. Now I just have to make a salad from spinach, lettuce, red cabbage, cherry tomatoes and yellow bell pepper. I'm not a fan of salad dressing usually so I might have some coconut yogurt on the salad if the curry is very hot.
 
I've got a pizza in the oven :clp:
I worked half day and didn't need to do anything after all, so I made dough for pizza, and a loaf of bread. I didn't have pizza sauce like I thought so simmered some marinara. All because I had two Beyond sausages left and didn't want pasta 🙄
I used Daiya block mozz and next time will freeze it first so it crumbles.
 
last night we made a 'full of veggies' couscous (mushrooms, onions, garlic, zucchini, bell pepper, cherry tomatoes) and lots of spices

edit: OMG I realized that we forgot to put in the chick peas........ arrrghhh

Wednesday night I ate the noodley soup that I didn't have for lunch
