Supper/Dinner Time! What's on the menu ?

Yesterday I had another large salad as a main dish: it had leafy greens, tomatoes, peppers, quinoa, pinto beans and dried barberries. The dressing was a mix of mustard, lemon, balsamic vinegar and tahini.
For dessert: banana mixed with dates, walnuts, dried coconut flakes and dried berries -with a sprinkle of almond butter and tahini. Plus: one juicy persimmon.
All very good.

I improvised a super sa1ad with raw greens; bell peppers; tomatoes; spring onions; boiled potatoes, carrots and beetroot; pinto beans and quinoa. Dressing: leftover (home-made) basil pesto, plus vinegar, mustard, tahini and lemon. Very filling - and it felt like a nutrition powerhouse.
For dessert: mashed banana with dates, dried berries, walnuts- sprinkled with dried coconut flakes, cinnamon, almond butter and tahini.
All very good.

We went to the lighting of the tree at the Country club last night. Needless to say that there was
hardly anything for me to eat for dinner at the buffet. A few leaves of salad/corn/beans and carrots that I found
are not enough to feed a normal human being. So, I had Monday`s leftovers at 9 pm for dinner when we returned , scalloped baked
potatoes in creamy oat milk, air fried spicy Quorn fillet, mixed vegetables and kale with yeast flakes. SD coffee ice cream
for dessert.
+ 300 people attended the event and they were all omnis.
 
The day before yesterday I had the leftover ‘super salad’, mixed with chickpeas (the dressing was made of balsamic vinegar, mustard, tahini, blended lemon) - Plus (for dessert): I had my ‘mashed banana mix’ (including walnuts, dried berries, cinnamon, dried coconut flakes, almond butter and tahini). All very good

Yesterday I had leftover farro and quinoa, mixed with chickpeas. I did some experimenting and the mix was sprinkled with Za’atar, white pepper, mustard and tahini. Plus (for dessert): banana mixed with pomegranate arils (excellent), followed by dried mulberries mixed with more pomegranate arils; and a persimmon. All very good.

yesterday's noodley soup was so huge and I ate around 1:30 pm that I didn't feel like eating much for dinner so I had potato chips with hummus, carrot cake, 2 almonds, 1 brazil nut
