I'm going to have breakfast for dinner, as I have leftover tater tots I want to use up. So I'm going to make a tofu scramble and have that with the tots and some vegan sausage patties.
Eggplant stew, with lentil and a little bit of leftover farro; a small piece of barley bread on the side. For dessert: mashed banana mixed with nuts, dried fruits, tahini and almond butter; and one persimmon. All good
I had soaked and boiled pinto beans on Monday so yesterday I made veggie pinto bean soup and put in all the usual suspects except I added a new ingredient that I hadn't used before, a half a can of pumpkin... it made it even more delicious and so that is what we had for dinner along with some whole grain baguette.
Main dish: Farro with black beans on top, mixed with some leafy greens and mustard;
Dessert: Nuts and dried fruits mixed with cinnamon, almond butter and tahini.
last night I was going to have a Gardein turkey dinner in celebration of the US Extra Grateful Day but was lazy and had Gardein Fissh burritos instead... the interesting part is that we decided that bean burritos are really much better than fissh or chkn burritos so I will buy less Gardein going forward and try to stick to more whole foods as a result
I had Field Roast celebration roast with porcini sauce, sauteed French beans, sweet potato and marshmallow bake, mashed
potatoes and cranberry compote. Daiya New York style cheescake.
Main dish: Pinto beans with quinoa, mixed with some chillies, leafy greens and mustard.
Dessert: Dates, nuts and dried berries mixed with almond butter and tahini.
All very good.
Made a mish-mash loaf . Pretty much how I make sausage patties-tempeh, walnuts, oats, celery and onions and vital wheat gluten.Would have been better kept as patties. with sweet potatoes
Raw salad with quinoa and pinto beans. The dressing was a mix of mustard, lemon, balsamic vinegar, and tahini.
For dessert: banana mixed with dates, walnuts and dried berries -with a sprinkle of almond butter and tahini.
All very good.
