Supper/Dinner Time! What's on the menu ?

made mushroom fettuccine a different way. I've read you should first boil the mushrooms before sauteeing , so did, then saved the cooking broth and sauteed with onions and garlic in a little oil. I sprinkled with flour, cooked a bit, then added the broth. Fettuccine was from Aldi cause they get good pasta, and mushrooms from Costco
One day I'm gonna splurge and get Costcos mixed mushrooms for $10. This time they had hen of the woods in the blend
 
I came back kind of late from spending the weekend at my parents' beach cottage, so I wasn't in the mood for cooking anything involved. I had an Aldi meatless ball grinder with pesto and vegan Parm along with some tortilla chips and a little hummus.
 
Cottage pie with lots of veggies. I will probably air fry some broccoli in some kind of spiced coating to go with it.
Made a mess of the broccoli so we had a green salad with it. The cottage pie was especially good today and we followed it up with a vegan kladdkaka and Alpro whipped cream. :drool::drool::drool::lick::lick::lick:
 
I made a salad with Greek style vegan cheese, cucumber, tomatoes and watermelon with balsamic glaze and olive oil. I think I read about it on here today.🤔 I had some vegan white chocolate afterwards.
 
a lentil chickpea stew I pretty much ruined....long stupid story :fp:
I tried to change my usual dump everything but tomatoes and spinach and let the IP do it's thing to cooking the lentils first, then adding the carrots celery potato and onion so they wouldn't get too cooked (not that that was bad really...). Anyway, I stupidly added the tomatoes with the veg and got a burn notice right off. I scraped the bottom, got it again. Switched pots - got it again. ended up putting it in a regular pot to finish cooking
Never never mix in tomatoes with thick soup in IP!

I do. However, I always add stock; Marmite and vegetable.
