Supper/Dinner Time! What's on the menu ?

Curious, I found this for Romano beans, but appartently they're the same? I can't find if these are the dried beans from the fresh plant?

Yep! Those are my favorite variety of green bean, and I usually grow them, saving some dry beans to plant in the future. If you let them ripen completely on the vine, the dry white beans look exactly like Navy or Great Northern beans to me. I think they also taste like them if you make pastafazool or Navy Bean soup.

I had a homemade just egg omelet with spinach, homemade vegan cheese, onions and olives topped with hot sauce. I tinkered with the mung bean just egg recipe a bit by using 1 1/3 cups of water, rather than combining non-dairy milk with the water in that 1 1/3 cups. I also added 1 TBSP of canola oil as suggested in one recipe I've looked at (it actually calls for 2 TBSP, but I just put in 1).

I think it made a big difference in the texture. It spread much thinner and still held together fairly well. I think going forward I'll use just water and that bit of oil. I figure I get about five servings out of the batch, so that's not a bad distribution of the oil.

last night I roasted some garlic and as I was out of mushrooms a can of whole button mushrooms in a bit of budder, for the top of our usual aglio y olio spaghettini with olives, green onions, more garlic, I also had to use up the tofu burgers I still had and also a 1/4 whole grain baguette in thin slices - whew what a ton of food it was - have I mentioned we love garlic and eat a lot of it lol

we ate our fairly large brunch late yesterday and then I grocery shopped for a few hours so cooking was not on the agenda last night - split a bag of potato chips and a package of plant-based apple streudel that I found while out...

I made a soy curls stir-fry with frozen veggies (broccoli, Brussels sprouts and green beans) and spinach. I mixed in some leftover ginger sauce. It was tasty for such a quick meal.

Tamale casserole
This is good with just beans, but I really love it with the Trader Joes soy chorizo. Does anyone know of any other? I'd be so sad if that went away, I want to go load up with that as well as TJ's soy beverage!

I'm going to have the stir-fry I made last night. I had the stir-fry without noodles or rice, last night, but tonight I will make some rice.

I put onion, garlic, potatoes, mini bell pepper, tomatoes, a cup of bob's veggie soup mix, celery, veggie broth powder, water and lots of spices. I am going to cook it low all day. There was a cold front and I am trying to use up my veggies.

Elbow macaroni with chickpeas and fresh broccoli- cooked from scratch. Simple- but good! I usually make a batch of any beans I cook and freeze half, which is what I had done this time. There's nothing wrong with frozen broccoli- it's better than no broccoli- but this was in good condition (even though it's winter?!) and I just HAD to get some. I also had some of it raw; it was perfect either way. The supermarket must have just gotten a shipment in or something...
