Supper/Dinner Time! What's on the menu ?

I was feeling like beans last night so I mashed a can of kidney beans and a can of pinto beans and heated them up in a pot with spices and salsa, basically my bean dip without all the veggies I normally add - put some cheez shreds and pickled jalapeno on top and scooped them up with blue corn tortilla chips - for dessert some of the pancake bars with maple syrup.

I wasn't all that hungry after my physical therapy session so I had an avocado sandwich with the fresh bread I bought. I had some pumpkin seeds as a snack and I have some strawberries too.

I've been on the go in RI the past few days, and today I didn't get home until 7:45, so I had avocado toast on homemade bread and a banana. I wasn't in the mood to cook. I hope to do some food prep tomorrow, but I do have some errands and a hair appointment, so we'll see how much I can get done.

I found the One Planet pizzas yesterday in a health food shop so I'm going to share one with my husband. I bought some fresh asparagus from the greengrocer and so I will roast it in olive oil and have that as well as a side salad with balsamic glaze.

Tuesday night we had a hot burger sandwich with tons of boiled potatoes and green peas, mushroom gravy with onions.

Last night we had gnocchi in lots of garlic, onions, zucchini, mushrooms, spag sauce and a can of white kidney beans.

both meals highly satisfying

Spanish style kidney bean & sweet potato/red pepper/fennel stew served with whole wheat couscous and raisins plus a
drizzle of evo and a sprinkle of smoked Cornish sea salt/yeast flakes.

Apple puree with a few drops of vanilla.

My schedule has been crazy lately, so I haven't been cooking and I've about exhausted the contents of the freezer. So tonight I made a smoothie with a banana, almond milk, oatmeal, cinnamon, peanut butter and spinach. Tasty.
