Hello All; I've been on a mission to create a great tasting vegan meatball recipe which has a chewy texture like meatballs made with meat. Is this possible ? If so , how. I have tried several vegan meatball recipes off the internet (All made with either black beans or chickpeas and they all crumble and fall apart. I've heard of using vital wheat glutin in a meatball recipe - would that create a chewy texture that doesn't fall apart ? Anyone have any actual experience with a great recipe they can share which is chewy and not crumbly ? Thanks.
