I finally use the food processor where my husband got me for holidays. I made some sun dried tomato and extra garlic hummus. So I put that on ciabatta bun with arugula, olives and hot sauce and tomatoes. It was so good.
I was craving crumpets the other day so picked up a pack of 6 at the hypermarket. After having a second thoughts, put the pack down as forking out a whopping € 2.70 seemed ridiculous.
Breakfast was a big bowl of oatmeal with flax, mixed berries, and a little maple syrup. And way too much coffee. ️️
Skipped lunch.
Dinner - home seasoned baked beans, and steamed cabbage, carrots, new potatoes and onion.
Last night, my wife and I were out to a vegan potluck, the first one we have been to in a long time. Not everybody there was vegan, but all the food was.
Lentil soup. A rice-and-black bean dish. A mushroom ragout. Rice and green salad. And lemon tart with cashew cream topping.
Very tasty, and we met a bunch of interesting new people.
