Whatcha Eatin?

Well I've been away for the weekend and had a wonderful meal Friday night at Fellinis in Ambleside (Lake District). Starter was marinated aubergine slices with tahini sauce, sun dried tomatoes and salad leaves. Main course was a nut roast wrapped in courgette slices, roast vegetables, mash potatoes and red wine sauce. Saturday night we ate at Zefferellis which was not quite as good but had a great starter of barbecued fennel in black olive dressing. Mediocre pasta dish for main, so made up for it with a scoop of vegan ice cream with espresso shot poured over it. We stayed at Ambleside Manor which is a vegan/vegetarian hotel with amazing breakfasts. Highly recommended for a special occasion (it was my birthday!)
 
Breakfast was Boston 3 grain brown bread, and a banana.
Lunch was a big cabbage, cake and tomato Salas, and 2 slices of Ezekiel toast, with blueberries compote.
Hubby's fixing supper- gnocchi with veg, white beans and marinara sauce.

Happy belated birthday. I follow a vegan couple on YouTube (Those Vegan Guys) and they visited that hotel and restaurant about a month ago. Looked lovely.:)

A pan fried happyvore banger with leftover vegetables; brussels/red pepper/French beans/evo/yeast flakes.
A few crisps.
Apple puree with soya yogurt plus a few drops of vanilla & sweetener

The workman finished the work very quickly so we went out to lunch after he left. I had vegan chicken tenders, fries and onion rings with a glass of wine! Healthy! :laughing:

Just cooking up my favourite pasta sauce for dinner tonight. Finely chopped slow sauteed onion and celery in a generous amount of olive oil, added chopped red pepper, courgettes and lots of garlic, then chopped tinned tomatoes, dried basil, oregano, a little veg stock powder, a pinch of chilli flakes, and a teaspoon of blackstrap molasses. It'll simmer until soft and be dolloped over some soybean and sesame pasta, topped with nutritional yeast and some toasted pine nuts.

Finely chopped slow sauteed onion and celery in a generous amount of olive oil, added chopped red pepper, courgettes and lots of garlic, then chopped tinned tomatoes, dried basil, oregano, a little veg stock powder, a pinch of chilli flakes, and a teaspoon of blackstrap molasses. It'll simmer until soft and be dolloped over some soybean and sesame pasta, topped with nutritional yeast and some toasted pine nuts.

love that you put molasses in it... I put it my porridge and often put dark cocoa in chili and hadn't thought of molasses - it adds such a rich flavour to everything!

I used to put a spoonful of sugar in to counteract the bitterness of the tomatoes, but then started using molasses as it's a good source of iron, adding it to everything I could! It works really well in tomato-based dishes

Breakfast was sourdough toast with strawberry preserves and vegan buttery spread, and an apple.
Lunch will probably balance out with a kale berry smoothie and a salad.
Supper will be some iteration of rice and beans....
