Whatcha Eatin?

Well I've been away for the weekend and had a wonderful meal Friday night at Fellinis in Ambleside (Lake District). Starter was marinated aubergine slices with tahini sauce, sun dried tomatoes and salad leaves. Main course was a nut roast wrapped in courgette slices, roast vegetables, mash potatoes and red wine sauce. Saturday night we ate at Zefferellis which was not quite as good but had a great starter of barbecued fennel in black olive dressing. Mediocre pasta dish for main, so made up for it with a scoop of vegan ice cream with espresso shot poured over it. We stayed at Ambleside Manor which is a vegan/vegetarian hotel with amazing breakfasts. Highly recommended for a special occasion (it was my birthday!)

I had half of a boca chick’n patty on a bun with pickles, onions, lettuce and ketchup, left over from last night’s dinner, so I had that for breakfast. 😀

Lunch was Gardein turkey cutlet/gravy. No veggies or starch so I’m going to be hungry in an hour lol. I need to get to the supermarket for more broccoli and cauliflower.

I did manage 1/2 cup of the So Delicious wondermilk vanilla ice cream.

A bowl of mole style 3 bean,sweet potato chilli with added fresh spinach and red roast peppers
with a huge sprinkle of Tajin.

Apple puree with soya yogurt/sweetener/a sprinkle of cinnamon.

A mug of Whittard's chocolate infusion with sweetener.
 
Leftover leek & soya curl in Dijon mustard cream sauce with short grain brown rice and a
sprinkle of lemon pepper.

Tajin flaovured puffs.

An orange.
