Whatcha Eatin?

Just had some vegan shrimps. Relatively good resemblance to the real thing, which is not a good thing in my book! I tried to drown them in vegan mayo, but there just wasn't enough mayo. Yeah, not my favourite!

The brand is called Happiee, and the product is Shrimpiee. Just in case anyone is curious.
 
A bowl of popcorn with nooch flakes, garlic powder, a little salt and a few dashes of hot sauce.
Wish I could do popcorn with just seasonings. I always need a half stick of melted earth balance which is why I can't make popcorn that often lol. 🤦🏻‍♀️
 
I just finished a lovely brunch: Banana-oats pancakes, home fries cooked in the air fryer, and an orange.

The pancake recipe was a Dani Spies one, and I tried it as part of my continuing effort to cut down on white flour. I figure if I'm never going to stop eating pasta and bread, I need to cut out some white flour in other things when I can. The flavor was great, but fluffy they were not. The original recipe calls for a cup of egg whites, but I subbed in flaxseed eggs, per the recipe suggestion for vegans. They were a bit dense to stay the least, but they tasted wonderful. So I will tinker the next time I make them. It also didn't help that it called for a high-speed blender, which I don't have, so I had to use my food processors. I want a kick-butt blender, but I have been waiting for a good sale as they are pricey.

I'm the opposite. I generally don't like butter on popcorn, but every now and then I'll do like a tablespoon of it. :D

I'm having banana oats pancakes with home fries and an orange, plus a mug of black coffee.

@PTree15 Sometimes if I'm trying to be good, I melt one tablespoon of butter and instead of pouring it on the popcorn I dip each kernel individually into the butter until it's all gone. I end up eating less popcorn that way which isn't a bad thing lol. It's very annoying but works when I'm strict and tracking calories. And that way I'm not feeling like I'm totally depriving myself of things I want/crave.

Green beans, cauliflower and rice with a drizzle of olive oil and a sprinkle of nutritional yeast and Parmesan.
